CAESAR SALAD
Serves 8-10
1 clove garlic
3 Tbsp lemon juice
1 Tbsp Dijon mustard
2 Tbsp capers, rinsed
½ cup light olive oil, or half olive oil and half canola or grapeseed oil
3 hearts of romaine
1 cup croutons
1 shredded carrot
Fine sea salt and freshly ground black pepper, to taste

In a blender or food processor combine garlic, lemon juice, mustard, and capers and process until smooth. While the machine is running, in a slow, steady stream, add the oil until well combined. Season to taste with salt and pepper.

In a large bowl, toss the lettuce and croutons with half the dressing, adding more as needed. Top with shredded carrots. Serve immediately.
