Brittle
1 cup sugar
1/2 cup white corn syrup (Karo)
1 cup roasted, salted peanuts
1 teaspoon margarine
1 teaspoon vanilla
1 teaspoon baking soda
In 1 1/2
qt. casserole dish, stir together sugar and syrup . Microwave on High
4 minutes. Stir in peanuts. Microwave on High 3 to 5 minutes. Keep an
eye on this because it will get VERY hot. Add butter and vanilla to syrup,
blending well. Microwave at High 1 minute. Peanuts will be lightly browned.
Add baking soda; and gently stir until light and foamy.
Quickly pour
mixture onto lightly greased cookie sheet. Let cool 1/2 to 1 hour. When
cool break into small pieces and store in airtight container.
Makes about
1 pound.
